Raw Sugar-Free Vegan Key Lime Mousse

It’s supposed to be spring now, so even though the weather is holding out on us, I’m channeling all the spring vibes in the kitchen, because I’m way beyond ready for it! So, the other day I experimented with a raw key lime pie and it was amazing. And since then I can’t stop making the filling – avocado key lime mousse! Raw, vegan, sugar-free, and the perfect balance of sweet, tart, and creamy. My taste buds can’t get enough.

And super-bonus: it’s 100% healthy for you. Not just ‘healthier’ but legit healthy. Avocados are jam-packed with nutrients – they’re high in Vitamins K, C, B5, B6, E, Folate, and Potassium, and contain small amounts of Magnesium, Manganese, Copper, Iron, Zinc, Phosphorous, and Vitamins A, B1, B2, and B3… phew! This fruit is full of healthy fat,  packed with fiber and even has a couple grams of protein per serving.

Avocados actually contain more potassium per serving than bananas –  I actually love to use avocados in my smoothies instead of bananas as they’re high in the healthy fats and low in net carbs and sugars. Some studies have also shown that avocados can reduce total cholesterol levels, lower the LDL, and increase the HDL (the good kind).

Avocado eaters tend to be generally healthier. Certain vitamins and minerals need to be combined with fats in order to be properly absorbed and assimilated by the body, so adding healthy fats – like from avocados – to your meals, especially salads, dramatically improves the nutrient value of the meal. Not to mention, consuming healthy fats in the evening can help improve sleep – win!

And, some studies provide evidence that avocados may have cancer-protective effects, and can possibly mitigate the side effects of chemotherapy.

… there are countless reasons to eat avocados, but for me the most important is just how darn creamy and delicious they are!

So back to that avocado mousse – blend up the avocado with some lime juice, coconut cream (more healthy fats!), a little vanilla and some green leaf stevia, and done! It’s super easy and so delicious.

Raw Sugar-Free Vegan Key Lime Mousse

Here’s what you need:

  • 2 avocados
  • juice of 1.5-2 limes
  • 4 tbsp coconut cream
  • 1 tsp vanilla
  • 1/2 – 1tsp green leaf stevia, to taste
  • *optional add 1-2 tbsp coconut milk to help it blend if necessary

How to make it:

  1. Pit the avocados and add all the ingredients to a blender.
  2. Blend until smooth and creamy!
